Safety of certain functions?

I saw that in the thread that showed the detectable functions for certain games that some were left out. How safe are ones like sv_cheats bypass?

Please give me a legit answer, it's not there for CS:GO and I'd like to know.

It is listed in my stickied post about settings that are safe and those that can cause untrusted.
